Italian Almond Cookies

A classic Italian cookie that is so easy to make!

Ingredients

  • 3 cups Almond Flour
  • 1 cup Sugar
  • Pinch of Salt
  • Zest of 1 Orange
  • 1 tsp Vanilla Extract
  • 1 tsp Almond Extract
  • 3 Egg Whites, room temp
  • Whole Almonds for Garnish
  • 1/3 cup Confectioner's Sugar

Instructions

  • Preheat the oven to 350℉.
  • To a bowl add almond flour, sugar, orange zest and a pinch of salt. Mix well.
  • Add egg whites, vanilla extract, and almond extract. Mix with a spatula until a dough comes together.
  • Add confectioner's sugar to a plate.
  • Using a 2 inch cookie scoop, scoop out the dough and roll it between your palms to smooth it out. Then roll in confectioner's sugar.
  • Place cookies onto a parchment lined cookie sheet 2 inches apart. Add a whole almond on top and press it into the cookie lightly.
  • Bake at 350℉ for 17 mins. Allow to cool on a wire rack.
