Add apples to a bowl and squeeze lemon juice on top.
To a sauté pan add butter and melt.
Add in the apples, flour, brown sugar, cinnamon, nutmeg, allspice, cardamom and salt. Cook until slightly softened and caramelized. Set aside to cool.
Mix all of the crisp ingredients together and set aside.
Roll out puff pastry and cut into 12 equal portions. Using a cupcake pan, place each piece of puff pastry into each well and press down.
Add approximately 1 1/2 Tbsp of Apple filling and top with a crumble. Brush the exposed crust with egg wash.
Bake at 375°F for 30-40 minutes or until golden brown.
