This stew is the perfect meal on a cold rainy day. The cabbage is sweet and the sausage is salty, the perfect bite! If you are a cabbage lover, you will love this stew.
Cut sausage links into 1 inch sections using a scissor.
Peel and dice the potatoes. Place in a bowl with cold water until ready to use, this will prevent them from oxidizing.
Cut the cabbages into a large dice, removing the thicker outside leaves and wash with cold water. Leave the cabbage in a bowl of cold water until ready to cook.
To a large pot, add olive oil, garlic cloves, and red pepper flake. Sauté until the garlic is fragrant, just a couple of minutes.
Add the sausage and cooking until browned. Then add in the cabbages and potatoes. Season with salt and pepper to taste and stir well. Cover to allow the cabbage to begin to wilt. After a few minutes, uncover and check to see if it needs water if not continue to cook, partially covered, on medium heat until the cabbage is tender and the potatoes are cooked, stirring occasionally. It should be tender after about 15 – 20 minutes.
