I love Mexican food! I make my version of it all the time. This is a recipe I have adapted from Mexican street corn. I use ingredients that I have on hand and it is amazingly delicious! So if you’re looking for an authentic Mexican street corn recipe…this may not be it but it is so good, trust me!

Frannie’s Street Corn

Ingredients

  • 5 Ears of Corn
  • 1/3 cup Mayonnaise
  • 1/3 cup Sour Cream
  • Juice of 1 lime
  • Zest of 1 lime
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/4 tsp Smoked Paprika
  • Salt to taste
  • Pecorino Romano cheese for sprinkling
  • Chopped fresh Parsley for garnish

Instructions

  • Remove the outer layers of the corn husk, keeping the inner layers in tact. Place the corn into a microwave and cook for 7 minutes.
  • Make the sauce by combining mayonnaise, sour cream, lime, juice, lime zest, chili powder, garlic powder, smoked paprika, and salt to taste. Set Aside.
  • Once the corn is cooked, place on the grill to char.
  • Smear this all over the charred corn. Then sprinkle with grated pecorino Romano cheese. Garnish with fresh parsley.
