When figs are in season I love to use them in recipes. This particular recipe is a favorite of mine. The combination of the sweet, salty and the beautiful funk of the cheese is music to my tastebuds! This salad can also be done with dried figs, but fresh figs in season are amazing.

Roasted Fig, Walnut & Gorgonzola Salad

A sweet and savory salad that will have your tastebuds singing!

Ingredients

  • 8-10 Fresh Mission Figs
  • 5 oz Arugula
  • 1/3 cup Roasted Walnuts
  • 2 oz Gorgonzola Dolce

Dressing

  • 1/4 cup Extra Virgin Olive Oil
  • 4 tbsp White Balsamic Vinegar
  • 1/2 tsp Garlic Powder
  • 1 tbsp Honey
  • 1/4 tsp Salt
  • Pepper to taste

Instructions

  • Cut the stem off the figs and cut in half. Place on a parchment lined baking sheet and broil until the tops have caramelized, about 5 mins but watch them so they don't burn. Set aside to cool.
  • Roast your walnut at 300℉ for 5 mins or until fragrant. Set aside to cool.
  • Prepare the dressing by adding oil, vinegar, honey, garlic powder, salt and pepper to a container with a lid and shake it well to emulsify.
  • To a bowl, add the arugula. The roasted figs, roasted walnuts, crumbled gorgonzola cheese.
  • Drizzle with dressing and serve as a stand alone with bread or beside a protein.
