This is the perfect summer taco, spicy, sweet and fresh! It is an easy weeknight meal that comes together in under 30 minutes. My take on tacos may not be traditional but still super delicious and easy to follow for my fellow homecooks.

Ingredients
1 1/2lbsLarge Shrimp, peeled and deveined
1/2tbspGarlic Powder
1tspCumin
1/4tspCayenne Pepper
1/2tspSmoked Paprika
1tspOregano
1tspChili Powder
Salt & Pepper to taste
2-3tbspOlive oil
Mango Salsa
2Ripe Mangos, diced
1Red Bell Pepper, diced
1Jalapeño, seeds removed and dicedyou can leave the seeds if you want more heat
1/2Small Red Onion, diced
2tbspCilantro or Parsley, minced
2Limes, juiced
Salt and Pepper to taste
2tbspOlive Oil

Instructions
I use frozen shrimp. If you are using fresh shrimp, skip this step. Defrost the shrimp by soaking them in cold water for about 30 mins, changing the water once during the 30 mins.
Then peel and devein the shrimp. Chef tip! I like to keep the shells to make shrimp stock!
Season the shrimp with garlic, cumin, cayenne, smoked paprika, oregano, and chili powder. Then season with salt and pepper to taste and drizzle with olive oil. Mix to coat and set aside while preparing the mango salsa.
Mango Salsa
Prepare all of your ingredients first. Dice the mango, onion, pepper, jalapeño, and parsley (or cilantro). Add all of these ingredients to a bowl. Season with salt and pepper. Squeeze the lime juice over the salsa and drizzle with olive oil. Mix well and set aside to marinate while you grill the shrimp.
I like to add the shrimp to skewers, it makes it easier to grill! Sear shrimp on both sides for only a few mins per side, do not over cook or they will be tough.
Assembling the taco
Toast your flour tortillas in a pan or over an open flame.
Add the shrimp to the toasted tortilla, along with a generous amount of mango salsa, 2 avocado slices and a squeeze of lime to finish 👌
