This is an essential part of any Italian antipasto. Homemade roasted peppers are so much more delicious than the ones you buy at the supermarket. This is a basic recipe that can be dressed up and used in many recipes. For example, add olives and roasted pignoli is an amazing addition on a crusty piece of bread. I also use these peppers in a recipe I love called Peperoni Gratinati. So many options!
Place peppers on parchment lined baking sheet. Roast under the broiler and char on all sides. Watch it carefully and turn as soon as one side is charred.
Place into a bowl and cover for 30 mins.
Peel the skin off and deseed the peppers. Do this over a bowl so you catch all the juices from the pepper, that is amazing flavor!
Strain the seeds out of the juices and add to the peppers.
Season with salt, garlic cloves cut in half, and oregano. Drizzle with olive oil and mix.
The best thing to do is to make these the day before so it has an opportunity to marinate and become really flavorful.
