This is my version of Irish Soda bread. It is delicious for breakfast, toasted with butter! This can really be enjoyed any day of the year. Happy St. Patrick’s Day!

Frannie’s Irish Soda Bread

A moist and delicious version of this Irish bread.

Ingredients

  • 480 g AP Flour (4 cups)
  • 65 g Granulated Sugar (1/3 cup)
  • 7 g Salt (1 tsp)
  • 6 g Baking Soda (1 tsp)
  • 56 g Unsalted Butter (4 tbsp)
  • 1 cup Dried Cranberries
  • 250 ml Buttermilk (1 cup)
  • 175 ml Heavy Cream (3/4 cup)
  • 1 Egg, room temp
  • Zest of one Orange

Instructions

  • Mix flour, salt, sugar and baking soda. Set aside.
  • Add butter to the flour mixture and work it in with your hands.
  • In a separate bowl, mix buttermilk, heavy cream and the egg. Zest in the orange and mix well.
  • Add Cranberries to the flour mixture and toss around to coat cranberries in flour.
  • Add wet ingredients to the dry and mix until combined. Flour a surface and knead the dough lightly into a ball. Place into a buttered cast iron skillet or place onto a parchment line baking sheet.
  • Bake at 375F for 50-55 minutes.
