Pizzelle are on every Italians Christmas table. My family comes from the Amalfi Coast so I had to make a Limoncello flavored one! These are so crisp and bright with the lemon zest, I know you will love this variation, especially if you love lemon flavored desserts.

Limoncello Pizzelle
Crispy and citrusy Christmas treat!

3 eggs 3/4 cup sugar Zest of one lemon 2 tbsp Limoncello 1/2 cup Unsalted butter, melted 1 3/4 cups flour 2 tsp baking powder 1/2 tsp salt
Sift flour and baking powder together and set aside.
Melt one stick of butter. Let it cool.
Using a hand mixer medium speed, the eggs and sugar until light, fluffy and thick. Drizzle in melted butter.
And add in 2 tbsp of Limoncello and lemon zest and mix.
Dump all of the flour in and using a spatula fold in the flour until just combined. Batter should be thick and scoopable.
Follow the directions for your pizzelle maker. Once ready, using a 2 inch cookie scoop, scoop the batter onto the pizzelle mold.
Place on a wire rack to cool and sprinkle with confectioners sugar.
