Limoncello Pizzelle

Crispy and citrusy Christmas treat!

Ingredients
  

  • 3 eggs
  • 3/4 cup sugar
  • Zest of one lemon
  • 2 tbsp Limoncello
  • 1/2 cup Unsalted butter, melted
  • 1 3/4 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions
 

  • Sift flour and baking powder together and set aside.
  • Melt one stick of butter. Let it cool.
  • Using a hand mixer medium speed, the eggs and sugar until light, fluffy and thick. Drizzle in melted butter.
  • And add in 2 tbsp of Limoncello and lemon zest and mix.
  • Dump all of the flour in and using a spatula fold in the flour until just combined. Batter should be thick and scoopable.
  • Follow the directions for your pizzelle maker. Once ready, using a 2 inch cookie scoop, scoop the batter onto the pizzelle mold.
  • Place on a wire rack to cool and sprinkle with confectioners sugar.
