Once the weather gets warmer in New York, I grill outside constantly. This roasted chicken is a delicious and easy weeknight meal and can be paired with my roasted and marinated zucchini for a healthy meal. The squeeze of lemon at the end really gives it that bite that is just so good!

Lemon Dijon Chicken
Roasted chicken that is easy and so delicious!

2-3 lbs Bone-in Chicken Thighs & Legs 1/3 cup Dijon Mustard 1 tbsp Garlic Powder 1 tsp Salt 1/2 tsp Black Pepper Juice of 1 Lemon 1 tbsp Fresh Rosemary, minced 3 sprigs Fresh Thyme 1/4 cup Olive Oil 1 Lemon for grilling
Marinade To a bowl add dijon mustard, garlic powder, salt, pepper, lemon juice and olive oil. Mix to combine.
Pour the marinade over the chicken and coat all the chicken in the marinade. Cover and refrigerate for at least 1 hour to overnight.
Add the chicken to the grill on low heat and cook until the internal temp reaches 165F, flipping a few times during grilling.
Cut a lemon in half and place cut side down on the grill and char the lemon for a few minutes.
Place the chicken on a platter and squeeze the charred lemon over the chicken before serving.
