“Gratinato” in Italian means baked or broiled with a golden crispy crust which usually includes some form of breadcrumb. You can do this to any protein or vegetable and it is such an amazing preparation for either.
A delicious crusted salmon dish that comes together in under 30 mins!

Ingredients
1Whole Salmon Filet
1cupPlain Breadcrumbs
1/4cupFresh Parsley, minced
2tbspCapers, chopped
2clovesGarlic, minced
2filletsAnchovy, minced
1/3cupKalamata olives, chopped
Zest of 1 Lemon
Juice of 1 lemon
Pepper to taste
Olive oil to moisten the mixture
Instructions
Preheat the oven to 400°F.
To a bowl, add breadcrumbs, parsley, garlic, capers, olives, anchovies and lemon zest. Squeeze the juice of one lemon over the mixture and drizzle with olive oil. Mix well, the mixture should resemble wet sand. If it looks too dry, add more olive oil. Set aside while you prepare the salmon.
Score the salmon fillet with a sharp knife by making cuts diagonally down the fillet in both directions.
Add the breadcrumb mixture to the top of the salmon and make sure to open those cuts up so you get the breadcrumbs in the cuts you made.
Drizzle the entire fillet with olive oil once again and bake for approximately 15 minutes or until it is cooked to your liking.
