Basil Pesto

Equipment

  • Food Processor

Ingredients
  

  • 4-5 cups Fresh Basil, washed and dried well
  • 2 cloves Garlic
  • 2-3 tbsp Pignoli nuts, toasted
  • 1/3 cup Grated Pecorino Romano
  • 1/3 cup Grated Parmigiano Reggiano
  • Zest of 1 Lemon
  • Salt & Pepper to taste
  • 1/3 cup Extra Virgin Olive Oil (more as needed)

Instructions
 

  • To the bowl of a food processor, add garlic, pignoli, and cheeses. Pulse a few times.
  • Add Basil and salt. Pulse several times to mince. Drizzle in olive oil with the processor running.
  • Add in Lemon zest and pulse a couple of times. Place into a bowl and cover with olive oil on top so it doesn't oxidize. Set aside until ready to use.
  • Boil your pasta of choice. Save a cup of pasta water. Add the pasta to a bowl, add as much pesto as desired and a little bit of pasta water and mix well.
  • Top with lots of grated cheese and enjoy!
