Mix warm water, yeast and honey in a measuring cup. Let it sit for 10 mins to bloom.
Mix the bread, whole wheat flour and salt in a large bowl.
Add the yeast mixture to the flour and mix well until all the flour is absorbed. Cover and let it sit for 1 hour to hydrate.
After 1 hour, start to stretch and fold the dough 4x around the bowl. Cover and let it sit for 30 mins.
Repeat the stretch and fold process 2 times waiting 30 mins in between.
After the third stretch and fold, cover and let it rise for 1 hour while he dutch oven is in the oven
Set the oven to 500℉. Place the dutch oven into the oven.
After 1 hour, gently dump the dough onto a floured surface. Gently pull the top into the center, the bottom in the center and the sides into the center. Gently turn the dough over and tuck it in for form the loaf.
Place the loaf onto a piece of parchment paper.
Remove the dutch oven from the oven and have a spray bottle ready with water.
Gently lower the bread into the hot dutch oven an score the top with a blade in a cross pattern to help it expand in the oven. Spray the wall of the dutch oven with water and place the cover on. If not using a dutch oven, spray the walls of the oven with water or add ice cubes to the bottom of the oven. Place it into the oven and bake covered for 30 mins and 15 mins uncovered. If not using a dutch oven, bake for 30-35 mins at 450℉ or until you have achieved the color on the bread that you desire.
Remove from the Dutch oven or oven and place on a wire rack to cool.
