This is a simple and quick weeknight meal that can be made in 20 minutes. A combination of Mediterranean flavors, this seasoning can be applied to many different types of fish, in particular Salmon.
Place parchment paper on a baking sheet and drizzle with olive oil. Place cod on top of olive oil.
Season with salt, pepper, garlic, parsley, olives, capers and lemon. Place lemon slices on top and sprinkle with Panko Breadcrumbs.
Drizzle with more olive oil and bake for 15-20 mins at 400F. Depending on the thickness of the fish you make want to check to make sure its cooked through.
