This is a simple and quick weeknight meal that can be made in 20 minutes. A combination of Mediterranean flavors, this seasoning can be applied to many different types of fish, in particular Salmon.

  • 2 lb Piece of Cod
  • 2 Garlic Cloves, Minced
  • 1 tbsp Fresh Parsley, minced
  • 2 tbsp Capers, chopped
  • 1/4 cup Kalamata Olives
  • 1/4 – 1/3 cup Panko Breadcrumbs
  • 1 Lemon, sliced thin
  • Salt & Pepper to taste
  • Extra Virgin Olive Oil for drizzling


  • Preheat the oven to 400F.
  • Place parchment paper on a baking sheet and drizzle with olive oil. Place cod on top of olive oil.
  • Season with salt, pepper, garlic, parsley, olives, capers and lemon. Place lemon slices on top and sprinkle with Panko Breadcrumbs.
  • Drizzle with more olive oil and bake for 15-20 mins at 400F. Depending on the thickness of the fish you make want to check to make sure its cooked through.
