Tex-Mex Salad with Grilled Chicken

Salads are not only healthy but can be packed with flavor. A great salad is a combination of flavors that are enhanced by a great simple dressing. There are a few elements that are key to making a great salad: fresh ingredients, crisp lettuce, and a great dressing. There are salads that are just meant as a starter or, in an Italian’s case, as a palate cleanser at the end of a good meal. Then there are these type of salads that are a meal in and of themselves. I hope you enjoy my take on a Tex-Mex Salad!

Tex-Mex Salad with Grilled Chicken

Course Salad

Ingredients
  

  • 2 1/2 lbs Chicken Breasts, Sliced Thin
  • 2 cups Cherry Tomatoes, cut in half
  • 1 Avocado, diced
  • 6 oz Shredded Cheddar Cheese
  • 3 Burrito sized Tortillas, cut into strips
  • 8 oz Can of Black Beans
  • 3 Ears Corn, Cooked and Charred on a grill

Taco Seasoning

  • 2 tbsp Chili Powder
  • 3 tsp Ground Cumin
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Red Pepper Flake
  • 1/2 tsp Dried Oregano
  • 1 tsp Paprika
  • 1 tsp Salt

Dressing

  • 1 Avocado
  • 3/4 cup Sour Cream
  • 1-2 Limes, juiced
  • 1 tsp Garlic Powder
  • Small Handful Cilantro or Parsley
  • Salt & Pepper to taste
  • Olive Oil to loosen the Dressing, if necessary

Instructions
 

  • Sprinkle seasoning on chicken and rub in. Set aside while you prepare the other ingredients.
  • Wash and dry the lettuce well.
  • Grill the chicken and cut into the strips or cubes, whatever you prefer.
  • Cook the corn for 6 minutes in the microwave in its husk. Remove the husk and silk and then char it on a grill or grill pan. Cut the corn off the cob.
  • Prepare the others elements of the salad; tomatoes, avocado, rinse the black beans, shred the cheese.
  • Cut the tortillas into strips and fry until crisp. Sprinkle with salt while still hot.
  • Make the dressing by adding all the ingredients to a blender and blend until smooth. Add olive oil if the dressing is too dense.
