Mini Italian Easter Bread

A traditional Sweet Easter Bread

Ingredients

  • 500 g Bread Flour
  • 100 g Granulated Sugar
  • 5 g Salt
  • Zest of 2 Oranges
  • 120 ml Warm Milk
  • 7 g Active Dry Yeast
  • 4 Eggs room temp
  • 113 g Unsalted Butter room temp
  • 6 Colored Eggs
  • Egg wash 1 egg + 1 tbsp water

Instructions

Coloring Eggs

  • Bring 3 cups of water to a boil. Add 1 cup of water to 3 different glasses. Add 2 tsp of white vinegar to each glass, along with 10-15 drops of food coloring of your choice. Stir to mix. Add the eggs to the solution and let it sit for 10 mins. Remove to a wire rack and let them air dry.

Dough

  • In a glass measuring cup place milk and microwave for 30 seconds. Temp should not exceed 110 F. Add dry yeast and a tsp of sugar, stir and let sit for 10 mins until foamy.
  • To the bowl of a stand mixer, add the bloomed yeast, flour, salt and sugar.
  • Start the mixer and add the eggs and orange zest. Mix until the dough comes together.
  • Add room temp butter 1 tbsp at a time, making sure it is incorporated before adding the next. Once all the butter is incorporated, let the mixer knead the dough until it releases from the sides of the bowl, about 5-7 mins.
  • Place into an oiled bowl and let it rise until it doubles in size, 1-2 hours.
  • Cut the dough into 6 equal pieces. Cut each piece into 2 equal pieces.
  • Grease a large muffin pan with butter.
  • Roll out each piece to a log and twist two of them together. Form a circle and place a colored egg in the center. Place each bread into a greased large muffin pan. Continue until you have made 6 breads.
  • Preheat the oven to 400℉. While the oven is preheating, cover the dough and let it rise until doubled in size, about 30 mins – 1 hour.
  • Brush with egg wash and sprinkle with nonpareils.
  • Bake at 400F for the first 10 mins and 350F of the next 20 mins.
  • Remove from pan immediately and place on a wire rack to cool.
