This is my go to pot pie recipe, whether it be chicken or turkey. The crust is so flaky and buttery and the filling is so flavorful. More oven Marie Callender, Frannie makes it better! 😂

Turkey Pot Pie

The ultimate American comfort food is a pot pie.

Ingredients

Crust

  • 2 1/2 cups AP Flour
  • 6 tbsp Cold Unsalted Butter, cubed
  • 2/3 cup Shortening, Lard or even cream cheese!
  • 1 tsp Salt
  • 1/2 cup Cold Water
  • 1 Egg + 1 tbsp water for egg wash

Filling

  • 2 cups Cooked Cubed Turkey or Chicken can be breast or thighs
  • 4 tbsp Unsalted Butter
  • 4 heaping tbsp AP Flour
  • 4 cups Chicken Broth
  • 2 12 oz bags of frozen Mixed Vegetables
  • 1 Onion, diced
  • Salt & Pepper to taste
  • 1 medium Potato, diced small

Instructions

Crust

  • To the bowl of a food processor, add flour, salt, butter and lard. Pulse until the butter is pea-sized.
  • Add cold water and pulse until the dough just starts to come together. Dump the dough out onto plastic wrap and refrigerate for at least 30 mins or overnight.

Filling

  • To a pot, melt butter and add flour, whisk to combine and cook until it darkens in color. Then add warm chicken broth whisking as you add it to prevent lumps. Stir frequently and cook until thickened, about 15 mins. Set aside.
  • To a saute pan, add olive oil and diced onion. Saute until translucent, then add frozen vegetables, season with salt and pepper and saute until tender. Add the gravy in with the vegetables.
  • Dice up the potato and add it to the mixture. Mix well to combine.
  • Preheat the oven to 400℉
  • Cut the pie dough in half. Roll out 1 piece to the size of a 9×12 pan. Place the bottom crust into the pan. Cut any excess and patch areas that need more dough.
  • Roll out the other piece of dough and set aside.
  • Add the filling into the pan with the bottom crust. Using a rolling pin, roll up the top crust and use it to guide the top crust over the filling. Fold the edges over and make sure to seal the seams well. Cut 4 slits into the top crust and brush with egg wash.
  • Bake for 45-1 hour until golden brown and bubbling.
