This one pot meal is so delicious! The deliciousness of artichoke dip made into a dinner. I am always looking to create new chicken recipes to add to my weekly dinner rotation. This is an easy and delicious recipe to add to you weeknight meals. It comes together quickly and with not a lot of clean up, I’m sold!

Spinach & Artichoke Dip Chicken

Ingredients
  

Chicken Seasoning

  • 2 1/2 lbs Boneless Chicken Thighs
  • 3 tbsp Garlic Powder
  • Salt & Pepper to taste
  • 1/4 cup Olive Oil

Sauce

  • 1 14oz can Artichoke Hearts, chopped
  • 10 oz Fresh Spinach
  • 1 Shallot, diced
  • 2 Garlic Cloves, Minced
  • 4 oz Cream Cheese
  • 1 Heaping tbsp Sour Cream
  • 1/3 cup White Wine
  • 1/2 cup Heavy Cream
  • 4 oz Mozzarella
  • 1/4 cup Grated Pecorino Cheese
  • Salt & Pepper to taste

Instructions
 

  • Season the chicken with garlic powder, salt and pepper and a drizzle of olive oil. Let that sit while you prepare the ingredients for the sauce.
  • Add olive oil to a saute pan, sear the chicken on both sides. Removed from the pan and set aside.
  • Into the same sauté pan, add more olive oil and diced shallot. Sauté for a few minutes and then add in the garlic. Sauté until fragrant. Deglaze a pan with white wine scraping up all the bits from the chicken. Then add in the heavy cream and the cream cheese. Let the cream cheese melt and then add the sour cream. Stir well to combine.
  • Add the chopped artichokes, let that simmer for a couple of minutes.
  • Add the chicken back to the pan and let it finish cooking through with the cover on, about 10 mins.
  • Remove the chicken from the sauce and place into a serving dish. Add spinach to the sauce and let it cook down. Then add mozzarella and pecorino and stir to combine.
  • Once the sauce is ready, pour it over the chicken and enjoy!
