Cavatelli with Broccoli
2 heads of Broccoli
1 1/2lb Ricotta Cavatelli
1-2 Tbsp pesto
3 cloves garlic
1/4 tsp red pepper flake
Chop and wash the broccoli. Boil until fork, tender in salted water.
Remove the broccoli from the pot and boil the cavatelli in the same water.
While the pasta is boiling, add olive oil, garlic and red pepper flake to sauté pan and sauté until fragrant.
Remove half of the broccoli and add to a blender with a ladle of pasta water and purée.
Add the pasta, broccoli and purée to the pan with the garlic and red pepper flake. Add pesto and grated cheese and stir to combine.
Top with more grated cheese, serve and enjoy!
