Cabbage & Beans

A hearty and delicious stew considered part of "Cucina Povera". This is a traditional dish usually made in the southern part of Italy.

Ingredients

  • 1 head Cabbage, diced
  • 2 cloves Garlic
  • Pinch Red Pepper Flakes
  • 9 oz Dry Roman Beans
  • 7 cups Water
  • 3 slices Thick cut prosciutto, diced
  • Olive Oil for the pot
  • Salt and Pepper to taste

Instructions

  • Place dry beans in a bowl and cover with water. Soak overnight.
  • The next day, place the beans in a pot with proscuitto and water. Season with salt to taste.
  • Bring the beans up to a boil, stir and then lower to a simmer. Cover the pot, vented, and let the beans cook until they are tender, about 45 minutes.
  • Cut up the cabbage, removing the outer thicker leaves. Break up the leaves and wash well.
  • Into a pot, add olive oil, garlic and red pepper flakes. Add the cabbage, straight out of the water into the pot. Season with salt and pepper, cover and let it cook until tender, stirring occasionally.
  • Add the cooked beans in with the cabbage and cook together for 10 min to marry the flavors.
  • Serve with a nice crusty piece of bread!
