
Corn Salad with Lime Dressing
I love a good salad with my BBQ! This corn salad is so delicious, you family with love it. It is also totally customizable to what you like in a salad. The lime dressing is so simple but gives it that tangy bite contrasted against the sweet corn!

Corn Salad with Lime Dressing
Delicious summer corn salad!
Ingredients
- 5 Ears of Corn white or yellow
- 3 tbsp Unsalted Butter
- 4 tbsp Olive oil
- 2 Avocados ripe
- 1/4 Red Onion
- 1 cup Cherry or Grape Tomatoes
- 1 Cucumber
- 1 cup Fresh Spinach
Lime Dressing
- 1/2 cup Olive Oil
- 2-3 Limes, juiced depending on how juicy they are
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 tbsp Dijon Mustard
Instructions
- Cut the corn off the cob.
- To a saute pan, add 3 tbsp of butter and 4 tbsp of olive oil. Once the butter has melted add the corn. Season with salt and pepper to taste and cook until it starts to brown. Remove from the pan and set aside.
- Prepare all your salad ingredients. Slice the onion and cucumber and cut the tomatoes in half and dice the avocado.
- Into a bowl or mason jar add all the dressing ingredients, olive oil, salt, pepper, lime juice, and dijon mustard. Shake well to emulsify.
- To a large bowl add the corn, onlon, tomatoes, cucumbers, avocado, and spinach.
- Pour all the dressing over the salad and toss to combine.
- Enjoy with any of your favorite grilled meats!
