This is yet another traditional Neapolitan Christmas cookie, flavored with the same spice called Pisto. These crunchy sweet taralli are on many tables for Christmas in and around the Naples area. They are so easy to make and are packed with warm spice flavors for the season.

How to make Pisto:
Combine 1/4 cup Cinnamon, 1 tbsp Black Pepper, 1 tbsp Nutmeg, 2 tsp Cloves, 3 tsp Star Anise, and 2 tsp Coriander and mix well. This can be stored in an airtight container and used in many different Neapolitan cookie recipes.

Ingredients
  

  • 350 g AP Flour (Approxiamately 3 cups)
  • 1/4 tsp Ammoniaca or Baking Powder
  • 1/4 tsp Salt
  • 4 – 6 g Pisto Spice **See Above** (2-3 tsp)
  • 200 g Granulated Sugar (3/4 cup + 2 tbsp)
  • 50 g Honey (2 tbsp)
  • Zest of 1 Orange
  • 60 ml Water (1/4 cup)
  • 60 ml Freshly Squeezed Orange Juice (1/4 cup)
  • 165 g Roasted Almonds, Chopped (1 cup)
  • 75 g Roasted Hazelnuts, whole (1/2 cup)
  • 1 Egg for egg wash

Instructions
 

  • Preheat the oven 350℉.
  • To the bowl of a stand mixer, add sugar, water, orange juice, almonds, orange zest, pisto spice, and honey. Mix well.
  • Sift the flour. Add the flour, salt and baking powder or Ammoniaca to the wet ingredients. Then add the whole hazelnuts and mix until a dough is formed.
  • Dump out onto a lightly floured surface and form a log about 3 inch thick. Cut 3 inch sections and roll to a log 1 1/2 – 2 inch thick and then form a circle and press the seams together. Press down on top of the cookie a bit. These will not expand much in the oven.
  • Place onto a parchment lined baking sheet and brush with lots of egg wash. Bake for 20-25 mins, on convection setting preferably.
