This is my ABSOLUTE favorite way to eat roasted peppers! So flavorful and perfect for lunch on a nice crusty piece of bread. My nonna used to make this often for me when she was visiting from Italy. It was her favorite as well.

Peperoni Gratinati

3 Red Bell Peppers 2 cloves Garlic, minced 1/4 cup Kalamata or Castvetrano olives, chopped 1 tbsp Capers, drained and chopped 3-4 filets Anchovies, chopped 1/4 cup Plain Breadcrumbs Olive oil to taste Dry Oregano to taste Salt & Pepper to taste
Place peppers under the broiler until blistered. Add to a bowl and cover with plastic wrap. Let it sit for 30 minutes.
Peel off skin over the bowl, so as not to lose any of the juices. Remove any seeds inside. Cut pepper into strips.
Add the peppers to an oven safe pan. Season with salt, pepper, oregano and olive oil. Mix well and flatten them out in the pan.
Sprinkle the top with capers, anchovies, olives and breadcrumbs. Drizzle with more olive oil.
Bake in the oven at 400F for 15mins or until bubbling and crusty on top.
Serve with a nice crusty piece of bread or friselle!
