Peperoni Gratinati

Ingredients
  

  • 3 Red Bell Peppers
  • 2 cloves Garlic, minced
  • 1/4 cup Kalamata or Castvetrano olives, chopped
  • 1 tbsp Capers, drained and chopped
  • 3-4 filets Anchovies, chopped
  • 1/4 cup Plain Breadcrumbs
  • Olive oil to taste
  • Dry Oregano to taste
  • Salt & Pepper to taste

Instructions
 

  • Place peppers under the broiler until blistered. Add to a bowl and cover with plastic wrap. Let it sit for 30 minutes.
  • Peel off skin over the bowl, so as not to lose any of the juices. Remove any seeds inside. Cut pepper into strips.
  • Add the peppers to an oven safe pan. Season with salt, pepper, oregano and olive oil. Mix well and flatten them out in the pan.
  • Sprinkle the top with capers, anchovies, olives and breadcrumbs. Drizzle with more olive oil.
  • Bake in the oven at 400F for 15mins or until bubbling and crusty on top.
  • Serve with a nice crusty piece of bread or friselle!
