Pecan Snowball Cookies

A melt in your mouth delight. An easy cookie that comes out perfect every time!

Ingredients
  

  • 1 cup Unsalted Butter
  • 1/2 cup Confectioner's Sugar
  • 1 tsp Vanilla Extract
  • 2 1/4 cups AP Flour, spooned and leveled
  • 1/4 tsp Salt
  • 1 cup Chopped Pecans
  • Confectioners Sugar for Rolling

Instructions
 

  • Cream butter and sugar together until light and fluffy. Add in Vanilla extract.
  • Sift flour and salt together. Add in dry ingredients to the creamed butter, making sure it is incorporated. Add in chopped Pecans and mix.
  • Refrigerate the dough for 30 mins.
  • Preheat the oven to 350℉.
  • Using a 1 inch cookie scoop, place the cookies onto a parchment lined baking sheet. Bake for 16-18 mins.
  • Roll the warm cookies in confectioner's sugar and place on a wire rack to cool.
  • These freeze really well, so they can definitely make these ahead.
