Thanksgiving Side Dish: Stuffed Mushroom Tarts

Stuffed Mushroom Tarts 

Ingredients:
1lb Hatfield Ground Sausage
8oz Baby Bella Mushroom
5oz Mascarpone cheese
3 tbsp Marsala wine 
1/4 cup grated Parmigiano 
1/4 cup green onions
1 garlic clove 
2 tbsp fresh parsley
1/4 cup Panko breadcrumbs 
1 sheet puff pastry

Mince mushrooms to a fine dice and marinate in Marsala wine, Set aside. In the meantime, sauté ground sausage until browned. 
Add minced mushrooms, and cook until softened.
Add in minced garlic and green onion and sauté until fragrant.
Add mascarpone cheese, cook until cheese has melted. 
Remove from heat and then add in Panko breadcrumbs, parmigiano cheese and fresh parsley. 
Preheat the oven to 375°F. 
While the oven is preheating, roll out one sheet of puff pastry and cut into 12 equal squares.
Place into a cupcake pan, fill each tart with a little over a 2 tablespoons of filling. Sprinkle with more parmigiano cheese. Brush exposed puff pastry with egg wash.
Bake for 25 to 30 minutes.
