Marble Pizzelle
This is my take on a classic Italian cookie for Christmas. It is so easy to make and so beautiful! It requires a pizzelle maker with you can purchase here, CucinaPro Pizzelle Maker.
Marble Pizzelle
The best of both worlds, Chocolate and Vanilla!
Ingredients
- 1 3/4 cups AP Flour
- 2 tsp Baking Powder
- 3 Eggs
- 3/4 cup Granulated Sugar
- 1/2 cup Unsalted Butter
- 1 tbsp Vanilla Extract
- 3 tbsp Cocoa Powder
Instructions
- Sift flour and baking powder together, add a pinch of salt and set aside.
- Melt one stick of butter and allow to cool.
- Using a handmixer medium speed, the eggs and sugar until light, fluffy and thick. Drizzle in melted butter.
- And add in 1 tbsp of vanilla extract and mix.
- Dump all of the flour in and using a spatula fold in the flour until just combined. Batter should be thick and scoopable.
- Remove half the batter and place into a separate bowl. Sift in cocoa powder and mix thoroughly using a spatula.
- Follow the directions for your pizzelle maker. Once ready, using a 2 inch cookie scoop, scoop some of the vanilla and some of the chocolate batter and place onto the pizzelle mold.
- Place on a wire rack to cool and sprinkle with confectioners sugar.
