Ingredients
- 500 g Bread Flour
- 10 g Salt
- 50 g Plain Greek Yorgurt
- 300 g Warm Milk
- 1 tbsp Olive Oil
- 7 g Active Dry Yeast (2 1/4 tsp)
Instructions
- Warm the milk (110℉), add yogurt, olive oil and yeast. Let it sit for 10 mins.
- Into a large bowl, add flour and salt. Pour the proofed yeast to the flour and mix well. Cover and let it sit for 1 hour to hydrate.
- After one hour, knead the dough for a few mins until you achieve a smooth ball. Oil the bowl and place the dough inside. Cover and let it rise until doubled in size, about 2 hours.
- Punch the dough down and cut into 8 equal pieces. Roll each piece into a ball and cover. Let them rest for 30 mins before rolling out.
- Roll each ball out to approximately an 8 inch circle.
- Heat a cast iron pan and place the pita and cook for about 30 seconds until you see bubbles forming. Then flip and cook for another 30 seconds. Flip again and cook for about 4 mins, flipping every minute until golden on both sides.
- Place on a plate and cover with a clean kitchen towel.
- ***If freezing, allow them to cool and then place in a freezer bag with wax paper between each pita.
