Spicy Sausage & Mussels

A quick and delicious seafood dish.

Ingredients

  • 2 lbs Mussels
  • 2 Spicy Sausage Links (more if you like!)
  • 2 Garlic Cloves
  • 1 Shallot
  • 1 bunch Parsley
  • 1/3 cup White Wine
  • 4 Whole Peeled Tomatoes from a can

Instructions

  • Place the mussels into a bowl, cover with water and add 1 tbsp of salt. Let it sit at room temp for 30 mins. After 30 mins, drain the water, check each mussel to see if it is closed and if not squeeze it. If it closes, it's alive and safe to eat, if not throw it out. Then remove the beard (the beard is a seaweed looking thing on the side of the mussel) and any impurities on the outside of the shell.
  • Slice the shallot thin, crush the garlic, and chop the parsley. Reserve the parsley stalks.
  • Into a pan, add olive oil and the sausage. Break up the sausage and sear well. Add in shallot, garlic, and parsley stalks. Saute until fragrant. Deglaze with white wine. Cook out the alcohol for a few mins. Add in the hand crushed tomatoes. Let this cook for 10 mins.
  • Add in the mussels and cover. Steam until all the mussels have opened, about 5 mins.
  • Toast slices of iItalian bread. Add the mussels to a large bowl and pour the sauce over them. Serve with toasted bread and enjoy!
