Chicken Cacciatore (Pollo alla Cacciatora)

Chicken Cacciatore or Hunter-style chicken is a dish that originated in central Italy. It is said to be a typical dish that hunter’s wives would prepare with ingredients that were gathered by their husbands. It is a stewed chicken dish in a flavorful tomato sauce. I love this dish because it is a one pot meal and perfect to serve with roasted potatoes or rice.

Chicken Cacciatore (Pollo alla Cacciatora)

A hearty stewed chicken dish from central Italy.

Ingredients

  • 3 lbs Bone-in Chicken Leg and thighs
  • 1 cup Baby Bella Mushrooms, sliced
  • 1 Onion, sliced
  • 1/3 cup White wine
  • 1 Red Bell Pepper, sliced
  • 2 cloves Garlic
  • 1 28 oz can San Marzano Tomatoes, pureed
  • 2 sprigs Thyme
  • 1 tsp Dried Oregano
  • 1/4 tsp Red Pepper Flakes
  • 1/2 cup Oil Cured Olives
  • 1/2 cup Chicken Broth
  • 1/4 cup Fresh Parsley, chopped
  • Salt & Pepper to taste

Instructions

  • Prepare all the ingredients for the dish. Slice the onion, core and deseed the bell pepper and slice 1/2 thick slices. Wipe the mushroom is a damp paper towel to remove any dirt and remove the stump, then slice. Smash the garlic cloves. If using olives with the pit, remove the pits and set aside. Puree the whole peeled tomatoes as well. Prepping everything will make putting this together much easier.
  • Into a large saute pan, add olive oil. Sear the chicken on all sides and remove to a plate. Set aside.
  • Into the same pan, add the sliced mushrooms and saute for a few minutes. Remove from the pan and set aside.
  • Add more olive oil to the pan, add in the onions and saute until they begin to soften. Deglaze the pan with white wine and allow the alcohol to cook out.
  • Then add in the peppers and garlic and saute until the pepper begin to soften.
  • Pour in the pureed tomato and add the mushrooms back in. Add the red pepper flake, oregano and thyme. Stir to combine.
  • Nestle the chicken in the sauce and add the olives. Pour in the chicken broth and using a wooden spoon gently mix the broth in with the sauce.
  • Cover and cook in low medium for 35-45 mins, gently stirring occasionally.
