
Roasted Red Peppers
This is an essential part of any Italian antipasto. Homemade roasted peppers are so much more delicious than the ones you buy at the supermarket. This is a basic recipe that can be dressed up and used in many recipes. For example, add olives and roasted pignoli is an amazing addition on a crusty piece of bread. I also use these peppers in a recipe I love called Peperoni Gratinati. So many options!


Roasted Red Peppers
Ingredients
- 4 Red Bell Peppers
- 3 Garlic Cloves
- 1/2 – 1 tbsp Dried Oregano
- Salt to taste
- Extra Virgin Olive Oil for Drizzling
Instructions
- Place peppers on parchment lined baking sheet. Roast under the broiler and char on all sides. Watch it carefully and turn as soon as one side is charred.
- Place into a bowl and cover for 30 mins.
- Peel the skin off and deseed the peppers. Do this over a bowl so you catch all the juices from the pepper, that is amazing flavor!
- Strain the seeds out of the juices and add to the peppers.
- Season with salt, garlic cloves cut in half, and oregano. Drizzle with olive oil and mix.
- The best thing to do is to make these the day before so it has an opportunity to marinate and become really flavorful.
