Muffuletta was something that was created in New Orleans. A classic Italian American sandwich that is filled with delicious cured meats and that olive tapenade that cuts through all that salty goodness. My favorite way to eat burgers are smashed. This Muffuletta version has all the flavors of a muffuletta sandwich.

Muffuletta Smash Burger

A delicious smash up of Muffuletta and burger!

Ingredients

  • 2 lbs 85% Ground Beef

Olive Tapenade

  • 3/4 cup Giardiniera, finely chopped
  • 1/3 cup Roasted Peppers, finely chopped
  • 1/2 cup Castelvetrano Olives, finely chopped
  • 1 tbsp Capers
  • 2 cloves Garlic, minced
  • 1/2 Shallot, finely diced
  • 1 tbsp Dried Oregano
  • 2 tbsp Fresh Basil, minced
  • 1/4 cup Red Wine Vinegar
  • 1/4 cup Extra Virgin Olive Oil
  • Pepper to taste

Toppings

  • 8 slices Prosciutto
  • 8 slices Sharp Provolone

Instructions

  • Finely chop giardiniera, olives and roasted peppers. Mince the basil, garlic and shallot.
  • To a bowl, add chopped giardeniera, olives, roasted peppers, basil, garlic, shallot, pepper to taste, red wine vinegar and olive oil. Mix well and set aside. The longer this sits the more flavorful it becomes. You can do it the night before if you prefer.
  • Form 4 – 5 burgers into balls.
  • Heat up your griddle. Add the Prosciutto slices and let them crisp up. Remove and set aside.
  • Toast your burger buns and set aside.
  • Oil the griddle and place the burgers on. Using a piece of parchment paper and a large spatula or burger press, smash the burger down to almost an inch thick. Cook to desired temp. Top with provolone to melt.

Assembly

  • Place the bottom toasted bun on a plate, add the olive tapenade, then the burger with cheese, top with crispy prosciutto, more tapenade and the top bun.
