Sausage & Potatoes with Broccoli Rabe
A simple weeknight dinner that goes together in 30 minutes with very little effort. This is one of my favorite combination of flavors! Give me some nice Italian bread and I am in heaven with this dish. It also makes a great sandwich the next day.
Sausage & Peppers with Broccoli Rabe
A delicious & easy weeknight meal!
Ingredients
- 2 bunches Broccoli Rabe trimmed and washed
- 2 Garlic cloves
- Pinch Red pepper flakes
- 1 anchovy fillet
- 9 Sausage links
- 4 – 5 Potatoes
- 1 tbsp Garlic powder
- 2 sprigs Rosemary
- Salt and pepper to taste
- Olive oil to sauté and for drizzling
Instructions
- Clean the broccoli rabe by cutting off the thick part of the stems and washing thoroughly.
- Peel the potatoes and cut into wedges. Place the potatoes in cold water while preparing the other ingredients. This will prevent them from turning brown (oxidizing). Remove the rosemary from the stem and mince. Set aside.
- Into a sheet pan lined with parchment paper, add the potatoes. Season with salt, pepper and garlic powder. Drizzle with olive oil and mix to coat the potatoes in the seasoning.
- Then add the sausage and the minced rosemary. Drizzle the sausage with a little more olive oil and bake at 400°F for 30 to 35 minutes, or until the potatoes are forktender.
- While the potatoes and sausage are in the oven, prepare the broccoli rabe. Into a large pot add olive oil, garlic, red pepper flakes, and an anchovy fillet. Sauté until the anchovy fillet has dissolved and the garlic is fragrant. Add the broccoli rabe by lifting it directly from the cold water it is soaking in into the pan. Adding it wet will allow the broccoli rabe to steam in the pot. Season with salt and pepper, stir to combine and cover vented, stirring occasionally. Cook on medium high heat until tender. This could take anywhere between 10 to 15 minutes. If you like your broccoli rabe with a little more bite, then cook it for less time, to your desired tenderness.
- Onto a large serving dish, add the cooked broccoli rabe, then add the sausage and potatoes on top. Serve with Italian bread and enjoy!
