Pasta e Piselli (Pasta with Peas)
The beauty of Italian cooking is in its simplicity. Few ingredients done well to make a spectacular meal. Pasta e Piselli is one of those dishes. It is made in many different ways, some ‘In Bianco’, some with a little tomato sauce, but all of them are soul satisfying dishes that transport you back into your nonna’s kitchen.
Pasta e Piselli
Simple, delicious pasta dish, perfect for a quick meal!
Ingredients
- 10 oz Frozen Sweet Peas
- 1/2 Onion, finely diced
- 3 Thick slices of Pancetta, diced
- 1/2 cup Water
- Salt and Pepper to taste
- 4 tbsp Olive oil
- 1/3 – 1/2 cup Grated Pecorino Romano
- 1 lb Pasta Mista
Instructions
- Into a sauté pan, add olive oil, diced onion, and pancetta sauté until the onion is translucent.
- Add in the peas along with 1/2 cup of water, season with salt and pepper, and covered to allow the peas to cook and plump up. This will take approximately 10 minutes.
- In the meantime, boil your pasta of choice. I am using Pasta Mista. Save a cup full of pasta water for later.
- Once the pasta is al dente, added to the pan with the peas, along with grated Pecorino Romano cheese and a splash of pasta water. Mix to coat the pasta in all the flavors in the pan. You can add more pasta water if it seems dry to you.
- Top with more grated pecorino Romano and enjoy!
