Vodka Sauce
This Italian-American dish is delicious and one of my family’s favorites! It is a simple dish that can be found at most Italian restaurants in America. It is a simple sauce that can be used in a variety of ways. I have used it on pizza, stuffed shells, fresh pasta, the possibilities are endless!
Vodka Sauce
A classic Italian American sauce!
Ingredients
- 1 lb Penne Rigate or Rigatoni (Fresh Pasta Recipe Here)
- 1 28oz can of San Marzano Tomatoes pureed or a jar of Passata
- 4 – 5 slices Prosciutto, diced
- 1/2 Onion or shallot, diced
- 2 tbsp Tomato Paste
- 1/3 cup Vodka
- 3/4 cup Heavy Cream
- Salt and Pepper to taste
Instructions
- To a saute pan, add olive oil and prosciutto. Saute for a few minutes and then add in shallot. Saute until translucent.
- Add in tomato paste and let it cook for a min. Then add in vodka and let the alcohol cook out, about 2 mins.
- Add tomatoes, season with salt and pepper and bring to a boil. Then lower down to medium and cook until thickened, about 20 minutes.
- Add in heavy cream, stir to combine and let simmer for 5-10 mins. This sauce can be made ahead of time and refrigerated.
- Cook the pasta and then add just enough sauce to coat the pasta. Then add the remaining sauce on top if desired.
