A Pizz’ I Spaghett’ (Spaghetti Pie)
I grew up eating this dish. It was a must have for an outing to the beach! It is delicious eaten cold or hot and a very portable snack.
A delicious combination of pasta, cured meats and mozzarella. A definitive crowd pleaser!
Ingredients
- 6 Eggs
- 1/3 cup Grated Pecorino Romano
- 4 slices Ham, diced
- 4 slices Prosciutto, diced
- 8 oz Mozzarella, cubed
- Splash of Milk
- Salt and Pepper to taste
- 1 lb Spaghetti
Instructions
- Begin by placing a large pot on the stove, filled with water. Bring that to a boil while you prepare the other ingredients.
- Chop up the ham, prosciutto and mozzarella.
- To a bowl add the eggs, grated cheese, splash of milk and salt and pepper to taste. Whisk to combine.
- Once the water is boiling, salt it well and add your pasta.
- Add the cooked spaghetti to the bowl with the eggs, add in the meats and mozzarella and mix well.
- On medium heat, heat a 12in fry pan with olive oil, add the pasta mixture and flatten it out so it cooks evenly. I like to place a cover on it so it cooks in the center.
- Once it's golden brown on one side, carefully flip it and cook on the other side.
- This can be eaten hot or cold. It's delicious!
