Shrimp Tacos with Mango Salsa

This is the perfect summer taco, spicy, sweet and fresh! It is an easy weeknight meal that comes together in under 30 minutes. My take on tacos may not be traditional but still super delicious and easy to follow for my fellow homecooks.

Shrimp Tacos with Mango Salsa

A light refreshing sweet and spicy taco! Perfect for summer meals!

Ingredients

  • 1 1/2 lbs Large Shrimp, peeled and deveined
  • 1/2 tbsp Garlic Powder
  • 1 tsp Cumin
  • 1/4 tsp Cayenne Pepper
  • 1/2 tsp Smoked Paprika
  • 1 tsp Oregano
  • 1 tsp Chili Powder
  • Salt & Pepper to taste
  • 2-3 tbsp Olive oil

Mango Salsa

  • 2 Ripe Mangos, diced
  • 1 Red Bell Pepper, diced
  • 1 Jalapeño, seeds removed and diced you can leave the seeds if you want more heat
  • 1/2 Small Red Onion, diced
  • 2 tbsp Cilantro or Parsley, minced
  • 2 Limes, juiced
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil

Additional ingredients needed

  • Flour Tortillas
  • 1 Avocado
  • 1 Lime

Instructions

  • I use frozen shrimp. If you are using fresh shrimp, skip this step. Defrost the shrimp by soaking them in cold water for about 30 mins, changing the water once during the 30 mins.
  • Then peel and devein the shrimp. Chef tip! I like to keep the shells to make shrimp stock!
  • Season the shrimp with garlic, cumin, cayenne, smoked paprika, oregano, and chili powder. Then season with salt and pepper to taste and drizzle with olive oil. Mix to coat and set aside while preparing the mango salsa.

Mango Salsa

  • Prepare all of your ingredients first. Dice the mango, onion, pepper, jalapeño, and parsley (or cilantro). Add all of these ingredients to a bowl. Season with salt and pepper. Squeeze the lime juice over the salsa and drizzle with olive oil. Mix well and set aside to marinate while you grill the shrimp.
  • I like to add the shrimp to skewers, it makes it easier to grill! Sear shrimp on both sides for only a few mins per side, do not over cook or they will be tough.

Assembling the taco

  • Toast your flour tortillas in a pan or over an open flame.
  • Add the shrimp to the toasted tortilla, along with a generous amount of mango salsa, 2 avocado slices and a squeeze of lime to finish 👌
