Strozzapreti with Peas, Asparagus & Prosciutto
Pasta is something that you can get creative with by adding flavor combinations you enjoy. This is a creamy pasta filled with a wonderful combination of Spring flavors. It is a quick and easy weeknight meal that feels gourmet!
Strozzapreti with Peas, Asparagus & Prosciutto
Ingredients
- 1 lb Strozzapreti Pasta (or pasta of choice)
- 1 cup Heavy Cream
- 1/2 Onion, diced
- 6 slices Prosciutto, diced
- 1 1/2 cups Frozen Peas
- 1 bunch Aparagus, trimmed and washed
- 1/3 cup Water
- 4 tbsp Olive oil
- Salt & Pepper to taste
- Pecorino Romano to Taste
Instructions
- Add Olive oil to a large saute pan. Once heated, add prosciutto and cook until crisp. Remove from the pan with a slotted spoon.
- To the same pan, add onion and saute until softened. Add Asparagus and peas with water. Season with salt and pepper. Cover and steam for a few mins until peas are plump and tender.
- Stir in heavy cream and reduce until slightly thickened.
- Boil the pasta according to package directions. Add pasta to the pan with the sauce and mix to combine, coating the pasta in the sauce.
- Add grated cheese and continue to mix.
- Plate the pasta and top with crispy prosciutto and more grated cheese! Enjoy!
