Italian Almond Cookies

Italian Almond Cookies
A classic Italian cookie that is so easy to make!
Ingredients
- 3 cups Almond Flour
- 1 cup Sugar
- Pinch of Salt
- Zest of 1 Orange
- 1 tsp Vanilla Extract
- 1 tsp Almond Extract
- 3 Egg Whites, room temp
- Whole Almonds for Garnish
- 1/3 cup Confectioner's Sugar
Instructions
- Preheat the oven to 350℉.
- To a bowl add almond flour, sugar, orange zest and a pinch of salt. Mix well.
- Add egg whites, vanilla extract, and almond extract. Mix with a spatula until a dough comes together.
- Add confectioner's sugar to a plate.
- Using a 2 inch cookie scoop, scoop out the dough and roll it between your palms to smooth it out. Then roll in confectioner's sugar.
- Place cookies onto a parchment lined cookie sheet 2 inches apart. Add a whole almond on top and press it into the cookie lightly.
- Bake at 350℉ for 17 mins. Allow to cool on a wire rack.
