Apple Cider Bundt Cake
Recipe
Recipe for filling:
3 apples, 1/4 cup brown sugar, 1/2 tsp cinnamon, 1/4 tsp salt, 2 tbsp butter, juice of 1/2 lemon
Cake Recipe:
3 cups AP flour
2 tsp cinnamon
1/4 tsp grated nutmeg
1 tsp vanilla ext
1 tsp salt
1 1/2 tbsp baking powder
1 cup granulated sugar
1 cup light brown sugar
1 cup veg oil
3 eggs (room temp)
1 cup apple cider
Cinnamon sugar topping:
1/4 cup granulated sugar, 1 tsp cinnamon, 4 tbsp melted butter for brushing
Preheat the oven to 325°F.
Start by sautéing the apples until tender. Set aside to cool.
In a bowl, measure out the flour, cinnamon, nutmeg, salt, and baking powder. Mix to combine.
In the bowl of a stand mixer, add both sugars and vegetable oil and mix until combined.
Add in room, temperature eggs, one at a time allowing each egg to be fully incorporated before adding the next.
Add in vanilla extract and apple cider and mix.
Slowly add in dry ingredients. Do not overmix or Bundt will be dense.
Spray the Bundt pan with nonstick baking spray! Pour 3/4 of the batter into the pan. Scoop the apples in and then pour the rest of the batter on top.
Bake for 1 hour and 5 minutes or until a knife comes out clean.
Mix 1/4 cup granulated sugar and 1 teaspoon of cinnamon in a bowl.
Melt 1/2 stick of butter in the microwave and brush the warm cake with it.
Sprinkle the cake with the cinnamon sugar mixture, using your hands to get up the sides of the cake.
