Mushroom Veggie Burger

On my quest to eat less red meat, I make a series of veggie burgers that are so good you won’t miss the beef burger! This Mushroom Veggie Burger is by far my favorite of all the ones I make, because the baby Bella mushrooms mimic the meaty-ness of an actual burger.

Mushroom Veggie Burger

The Best Meatless Burger you will ever have!

Ingredients

  • 2 8 oz Packages of Baby Bella Mushrooms
  • 1/2 Shallot
  • 1 cup Cooked Brown Rice
  • 1 tbsp Garlic Powder
  • 1/3 cup Plain Breadcrumbs
  • 2 tbsp Fresh Parsley chopped
  • 1 Egg
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • Cook the rice according to package directions. Make sure you season the rice with a bit of salt. Set aside to cool.
  • Clean the mushrooms with a damp paper towel and remove the stems. Chop into a small mince (you can use a food processor for this step).
  • Mince the shallot and set aside.
  • Into a saute pan, add olive oil. Add the shallots and let them soften for a minute or two. Then add the mushrooms. Cook until the water in the mushrooms has evaporated. Season with salt and pepper and continue to cook for a few mins until they start to sear a bit. Set aside to cool.
  • Mince the parsley and set aside.
  • To a bowl, add the cooled mushrooms and rice. Then add garlic powder, breadcrumbs, parsley, and an egg to bind everything together. Season with salt and pepper. Mix well and let it sit for 15 mins to bind.
  • Then form 4 patties and place them on a baking sheet lined with parchment paper. Cover with plastic wrap and place into the refrigerator to set for at least an hour or overnight. You can also freeze them at this point.
  • To a fry pan on medium heat, add a drizzle of olive oil. Add the patties once the oil is hot. Sear on both side for 4-5 mins on each side, flip carefully to ensure they don't break apart. I like to place the cover on for the first side so it plumps up. Then add cheddar jack cheese on top and place the cover on again to melt the cheese.
  • Toasting your buns is a preference but in my opinion, A MUST!
  • Suggested toppings:
    Grilled Onions
    Tomato
    Romain Lettuce
    Special Sauce (Just equal amounts of Ketchup and Mayo 😉
