Basil Pesto
The smell of basil is just one of those things that takes you to summer. Pesto is uneasy way to have a delicious quick meal on a hot summer night. This sauce can be used on pasta, sandwiches, pizza and so much more. It can also be made in summer and frozen in an ice cube tray to use all year in a variety of recipes.
Basil Pesto
Equipment
- Food Processor
Ingredients
- 4-5 cups Fresh Basil, washed and dried well
- 2 cloves Garlic
- 2-3 tbsp Pignoli nuts, toasted
- 1/3 cup Grated Pecorino Romano
- 1/3 cup Grated Parmigiano Reggiano
- Zest of 1 Lemon
- Salt & Pepper to taste
- 1/3 cup Extra Virgin Olive Oil (more as needed)
Instructions
- To the bowl of a food processor, add garlic, pignoli, and cheeses. Pulse a few times.
- Add Basil and salt. Pulse several times to mince. Drizzle in olive oil with the processor running.
- Add in Lemon zest and pulse a couple of times. Place into a bowl and cover with olive oil on top so it doesn't oxidize. Set aside until ready to use.
- Boil your pasta of choice. Save a cup of pasta water. Add the pasta to a bowl, add as much pesto as desired and a little bit of pasta water and mix well.
- Top with lots of grated cheese and enjoy!
